Honey Soy Salmon

2 whole Salmon Fillets (skin On Or Off, Whatever Your Preference)
Salt And Pepper
Olive Oil, For Cooking
2 Tablespoons Butter
3 Tablespoons Honey
3 Tablespoons Low Sodium Soy Sauce
2 whole Limes
Cilantro, For Serving
Cooked Rice, For Serving

Season the salmon with salt and pepper. Heat a little olive oil in a nonstick skillet over medium to medium-high heat and place the salmon, skin side down (if you left the skin on) in the pan. Cook for 5 minutes on the first side, being careful not to burn the surface. Carefully flip to the other side and cook for another 2 minutes. Remove the salmon to a clean plate.

In the same skillet, add the butter, honey, soy sauce, and juice from the 2 limes. (You can also zest in the lime before you juice it if you'd like.) Stir and cook over medium heat for a couple of minutes, until the glaze is thick. Taste and adjust the flavors, adding more of whatever you'd like. Cook if for another minute or two if you like the glaze very thick.

Place the salmon back into the skillet and spoon the sauce all over the top. Stir together cooked rice with a little lime juice (and zest, if you'd like.) Serve the salmon over the rice, spooning on extra sauce. Sprinkle with chopped cilantro, add a lime wedge, and chow down

Pan Seared Porkchops

Chops
5-6 Pork Chops (half inch or less thick)
Rinse in cold water, sprinkle with salt and pepper/set aside
1 cup flour
cayenne pepper (desired amount)
salt
pepper
onion salt
garlic powder
butter
Crisco oil

Combine dry ingredients. Coat pork chops in four mixture and set aside. Heat pan to medium high heat. Add Crisco oil, enough to coat bottom of pan. Add 2 Tablespoons butter. Cook each chop for 2-3 mins per side.

Orange Chicken Arugula Salad

Salad
1 Orange peeled and thinly sliced
1 small bag sugar snap or snow peas
1 avocado
1 handful of feta or goat cheese to sprinkle ontop
1 container arugula lettuce
1 to 2lbs pan seared chicken (seasoned with steak seasoning)

Dressing
3/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
Salt
Fresh-ground pepper
1 teaspoon brown sugar
2 cloves garlic minced
Blend in food processor

Best soup ever (Ham and Potatoe)

Ingredients (always double this recipe)

3 1/2 cups potatoes chopped
1/3 cup celery (I dont add)
1/3 cup onion
3/4 cup diced ham (saute and brown on stove in butter, costco ham is yummiest)
3 1/4 cup water/ 3 boullion cubes
1 Tablespoon salt/ 1 Teaspoon pepper
5 Tablesppons unsalted butter
5 Tablespoons flour
2 cups milk

Directions
In sauce pan wisk butter, add flour till smooth. Add milk and continue wisking till smooth. 5 Mins. Add all other ingrediants simmer on medium/low for 25 to 30 mins. Serve.

Vegetable soup

Ingredients
  • 2 1/2 Tbsp olive oil
  • 1 1/2 cups chopped yellow onion (1 medium)
  • 2 cups peeled and chopped carrots (about 4)
  • 1 1/4 cups chopped celery (about 3)
  • 4 cloves garlic, minced
  • 5 (14.5 oz) cans chicken broth or vegetable broth
  • 2 (14.5 oz) cans diced tomatoes (undrained)
  • 3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
  • 1/3 cup chopped fresh parsley
  • 2 bay leaves
  • 1/2 tsp dried thyme
  • Salt (2 teaspoons) and freshly ground black pepper
  • 1 1/2 cups chopped frozen or fresh green beans
  • 1 1/4 cups frozen or fresh corn
  • 1 cup frozen or fresh peas
  • 1 can rinsed garbonzo beans
  • 1 can rinsed red kidney beans
  • 1 can hunts tomato sauce
  • 1 teaspoon steak seasoning
  • 1 teaspoon italian seasoning
  • 1 small bunch kale coarsly chopped
Directions
  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery and saute 3 - 4 minutes then add garlic and saute 30 seconds longer. Pour in broth (if you want lesser ratio of broth use 3 cans then only 3/4 cup of the 4th can) and add tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper to taste. Add beans staek and italian seasoning. Bring to a boil, then add green beans, reduce heat to medium-low, cover and simmer until potatoes are tender, about 20 - 30 minutes, then add corn, peas, kale and cook 5 minutes longer. Serve warm.

Bread/Rolls

5 cups warm water
3 Tbs yeast
1 Tbs salt
1/2 cup melted butter/ not hot
1/2 cup sugar
6 1/2 cup flour- till the bread pulls away from the pan

knead in more flour on table, wash out pan, butter pan let rise to top of pan. roll out buns- or bread. Bake @350 15-25mins.

Beef and Tomato Macaroni Soup

Ingredients
1 lb ground beef
1 cup onion diced
3 cloves garlic minced
6 cups beef broth
1 28 ounce can chopped tomatos
1 28 ounce can whole tomatos
1/2 cup ketchup
1 1/2 Tbsp worchestershire sauce
2 Tablespoons brown sugar
1 teaspoon italian seasoning
3 cups cooked elbow macaroni, or two cups dry
salt and pepper as desired

Directions
Brown beef , onions and garlic until beef is no longer pink. Add broth, cans of tomatos and remaining ingredients. Simmer for 45 mins add noodles cook another 15 mins (if noodles are dry). Serve.
